Described by Italians as “small mouthfuls”, they are bite sized, semi-soft, mozzarella cheeses roughly the size and shape of a small egg. They are easily perishable so must be stored in water. Their delicate and mild flavour makes them the perfect choice for salads and cured meats, accompanied by a crisp, white wine such as a Sauvignion Blanc.
